After 2 years of travelling in Asia, whilst on a meditation course in India, Oliver and I both got the feeling we were meant to go to America.
I have learned to trust my intuition especially when it goes against what I would expect.
So in early May we left Asia, me to California and Oliver to Germany.
2 Days after my arrival my Dad went into the hospital with heart problems. (He also has Type 1 Diabetes and Parkinsons Disease.)
I suggested that a change in diet, doing more walking, and incorporating meditation and breathing exercises into their lives for 6 weeks might make a positive difference in their overall health and wellbeing.
I cleared out all the dairy and meat products from their fridge replacing them with plant based organic only foods.
Dad struggled giving up his Skippy peanut butter as I replaced it with an organic version that was only ground organic peanuts, and Mum had her occasional desire for diet Coke, (which she overcame!) but they both stuck to it for the 6 weeks. No animal products what so ever.
I encouraged them to drink more water and no cokes, and they switched to almond milk in their coffee.
I cooked vegan meals for them nearly every night of the 6 weeks and they loved it.
And I loved cooking, preparing, and shopping for the organic produce at the local farmers market and Berkeley Bowl. It felt good and creative to be using fresh whole organic foods and creating beautiful yummo meals for my parents. It felt like a gift I could give them and also enjoy myself.
So what was the result?
It has been a month now since the official 6 weeks ended and my Dad reports that his whole way of viewing food has changed. They arnt 100% Vegan but he said they are eating very little animal products and Mum is steadily continuing to lose weight.
Dad has energy and hasn’t had to go back to the hospital.
They are walking everyday and it is getting easier.
They are feeling good, happy, and healthy!
I have continued on the Vegan diet and am contemplating the idea of becoming a proper raw food vegan chef! (or at least do some formal trainings!)
Here are some more of the amazing plant based meals I made.
Almost everything I made was of my own creation so will try hard to remember what I did and write the recipes with more photos here soon!
